The perfect side dish for your Fourth of July BBQ

There are certain recipes that disappear before the burgers even come off the grill. This is one of them.

Fresh sweet corn, crisp vegetables, creamy feta, and a drizzle of homemade honey butter dressing make this salad bright enough for summer picnics but comforting enough to remind you of backyard cookouts growing up. It comes together in about 20 minutes and actually tastes even better after it sits in the refrigerator for a few hours.

Ingredients


Salad

  • 5 ears fresh corn (or 4 cups frozen corn, thawed)

  • 1 cup cherry tomatoes, halved

  • 1 red bell pepper, diced

  • ½ small red onion, finely diced

  • ½ cup crumbled feta cheese

  • ¼ cup chopped fresh basil

  • 2 tablespoons chopped parsley


Honey Butter Dressing

  • 3 tablespoons melted butter

  • 2 tablespoons honey

  • 2 tablespoons olive oil

  • 1 tablespoon lemon juice

  • 1 teaspoon Dijon mustard

  • ½ teaspoon garlic powder

  • Salt and black pepper to taste


Instructions

  1. Grill or boil the corn until tender. Let cool and slice the kernels from the cob.

  2. In a large bowl combine:

    • corn

    • tomatoes

    • bell pepper

    • onion

    • basil

    • parsley

  3. Whisk together all dressing ingredients until smooth.

  4. Pour dressing over the salad and toss until everything is evenly coated.

  5. Gently fold in the feta.

  6. Refrigerate for at least one hour before serving.
