Ingredients
Salad
5 ears fresh corn (or 4 cups frozen corn, thawed)
1 cup cherry tomatoes, halved
1 red bell pepper, diced

½ cup crumbled feta cheese

2 tablespoons chopped parsley
Honey Butter Dressing
3 tablespoons melted butter
2 tablespoons honey

Instructions
Grill or boil the corn until tender. Let cool and slice the kernels from the cob.
In a large bowl combine:

bell pepper
onion
basil
parsley
Whisk together all dressing ingredients until smooth.
Pour dressing over the salad and toss until everything is evenly coated.
Gently fold in the feta.
Refrigerate for at least one hour before serving.
