Whether you're hosting a summer BBQ, pretending your Tuesday is a Friday, or just feel like bringing beach vibes to your kitchen, this recipe is basically sunshine wrapped in a tortilla. You will need:
1 Pork Loin trimmed
1 jar Pineapple Salsa (Mango is also delicious)
1/2 tsp Ginger
1/2 tsp Cinnamon
1/2 tsp salt
1/2 tsp pepper
1 tsp Chipotle Powder
Taco shells
French's Fried Onions (or Trader Joes Crispy Jalapenos)
Cheddar Cheese (opt.)
Place pork loin in crock pot. Pour entire jar of salsa on top. Add the Ginger, cinnamon, salt, pepper, and chipotle powder. Cook on high for 8 hours.
When Pork is done, shred the pork. Place in taco shells and toppings (Crispy Jalapenos or Onions and cheese). Enjoy!
